In which we take a good look at Danielle’s shins

Not that it hasn’t been the season for comfort food for most of 2020, but now it just seems right more than ever. And we’ve been fans of Danielle Alvarez of the acclaimed Fred’s restaurant outside Sydney for a good bit now. The Chez Panisse and French Laundry alum brings a signature farm-to-table style to the menu, and especially this uber comforting dish featuring a braised grassfed beef shin over pappardelle noodles. It’s simple, cost-effective, and ingredient-focused, but with layers and layers of flavor that wrap you up like a hug from your mum.
