Sweet Chili Lime Goat Ribs
1 pound goat ribs
¼ cup sweet chilli sauce
1 ½ tablespoons lime juice
2 tablespoons canola or rice bran oil
1 teaspoon finely grated ginger
2 tablespoons salt reduced soy sauce
Place the sweet chili sauce in a large non metallic bowl with the lime juice, oil, ginger and soy. Stir until combined then add the goat racks and coat in the marinade. Cover and refrigerate up to 3 hours.
Heat oven to 350°F. Take the racks from the marinade (reserving the marinade to baste) and lay on an oiled wire rack in a large baking tray lined with baking paper. Cook 20-25 minutes, basting regularly with the reserved marinade until cooked and sticky.
Serve with Asian style coleslaw or vermicelli noodle salad.
