Hotel menus are a great place to spot innovative and delicious dishes with Aussie proteins. From coast to coast, the chefs at these lodging-based restaurants are anything but sleepy. Wagyu beef bacon carbonara? Lamb pastrami sliders? Thai-style lamb spring roll?
We start in style at the Baccarat Hotel in NYC, with our mate Chef Asher Biju. He’s got lamb pastrami sliders with pepper jack, pickled slaw, and saffron aioli. And Aussie Wagyu Steak Frites! Love it.
Also in NYC, The Osprey, Hotel 1 in Brooklyn has a showstopper on its hands. It’s Chittara carbonara, done with Westholme Wagyu beef bacon, grana padano, free-range egg yolk, black pepper… and optional black truffle. We’re opting in, thanks!
Over in Arizona at the JW Marriott Desert Ridge and the Kembara signature restaurant, Chef Penny Tagliarina tucks Aussie lamb in a Thai-style spring roll, with tomatoes, cumin, coriander and cilantro yogurt. Yes!
We first noticed Chef Mark Grant at Hotel Laveque in Columbus OH with his koji-rubbed Aussie grassfed skirt steak with red chimichurri. Then we heard about his lamb chops au poivre, served up with showy verticality and an innovative twist on sauce vierge. Nice one Chef!
Over at Edge Brasserie at the Four Seasons Miami, new chef Edouard Deplus is continuing a strong tradition of Aussie lamb on the menu with a duo of Australian grassfed lamb chops & sausage, served with smoky eggplant caponata, pickled pine nuts & raisins.
At the Hotel Drover, in Fort Worth TX, Chef Grant Morgan’s serving up Australian rack of lamb with smoked tri color baby carrots, brown butter sauce, mint spaetzle, and smoked onion mustard. Boom.
