Aussie beef shines at Little City Farm in LA

Freshly returned from a trip to Australia to see how beef is raised down under, official “Aussie Beef Mate” and #aussome chef Jason Fullilove hosted an exclusive group of guests at the Little City Farm venue in LA’s Koreatown. Meant to introduce chefs and influencers to high-quality Australian beef (and some of those who supply it!), Chef and his team cooked up a menu worthy of LA’s glitterati, in a pastoral setting you’d never expect in the middle of LA.  

“I can’t stop talking about the quality of Australian beef,” says Chef Jason. “The more people get to taste it and learn about the animal welfare and quality measures, the more we’ll start seeing it here in the US. It’s a great fit with diners here in LA, and I’m eager to share it!”  

Here’s a look at the menu: 

First course - braised wagyu cheek, paired with roasted bone marrow 

Purebred Award-Winning Australian @stockyardbeef Wagyu Beef paired with Parmesan Roast Fingerling Potatoes and Salt Roast Baby Beets. Savory and delightful, enhanced with Tumie Coco Jus De Vin, a sprinkle of sea salt, and fresh flowers from the Little City Farm’s vibrant garden.  

 

“I kept the beef treatment really simple to let it shine – it’s F4 (purebred) Wagyu after all! The cheeks we braised, and were a real treat – they’re typically hard to get here in the US, but my new mates at Stockyard hooked me up.”
