When a TV Chef Goes to a Farm Down Under

We’re super chuffed about Australia’s current run on Chef Walter Staib’s “Taste of History” program on Public Television. We wake up proud of our country’s farmers and chefs, but having a TV crew come and show it off to the world is flat out #aussome. There are so many excellent moments across the episodes, but we do have a few favorites.

The visit to Ben Nevis Angus in New South Wales with Erica and Stu Halliday stands out and illustrates the animal welfare and environmental benefits of raising beef in a pure environment, naturally, year-round. Not only do you get to see the scale and beauty of this amazing property, Erica and Stu get gold stars for a simple and elegant lesson on how grazing cows help capture carbon and make carbon neutral animal agriculture possible!

Down in Victoria, Chef Walter visits with Tim Leeming of Paradoo Prime to get into the Aussie lamb story. Not only is it a gorgeous property that’s ideally suited for raising lamb, the Paradoo Prime way of farming is top-class for animal welfare and land management at scale. As a lifelong fan of Aussie lamb, Chef Walter was thrilled to trace it back to the start to see what makes it the world’s best.
